Meet Our Vendors: Whimsy Chocolates
We are excited to introduce you to ANOTHER new vendor, Whimsy Chocolates! We can’t wait to try these delicious chocolates. Let’s learn more shall we?
Who are you and what do you do?
My name is Pamela Wanous and I am a Chocolatier. I enjoy coming up with new innovative flavors. I have a passion for combining other craft local products with our delicious chocolates, doing wine and chocolate pairings, and meeting new people at events.
What’s the latest thing you’ve been working on?
We just launched our Collaboration Series. It consists of 7 Portland area Collaborations. Jacobsen Salt, Bee Local Honey, The Jasmine Pearl Tea Co, Rose City Coffee Co, Ground Up PDX, Portland Soda Works, and Koi Pond Cellars. It has been a joy to work with each company. Some of the most challenging and rewarding chocolates that have been created through this has been the Tea Infused Caramels and the Bee Local Honey Meltaway.
The Tea Caramels are our most “out side the box” creations. We start with Jasmine Pearl’s loose leaf tea and infuse it into some really good whisky. We let it age for 3 month. After straining the tea we add the whisky to our caramel. There are 5 teas flavors that we infuse. Orange Fennel, Dark Forest (this tastes like gingerbread cookies dipped in chocolate), Haiku Peach (peaches and cream), Black Wolf (Blackberries and Elderberries), and Feel Better (Lemon and Ginger).
The Bee Local Honey Meltaway is the combination of Dark Chocolate, Organic Coconut Oil, Honey and a little sprinkle of Jacobsen Sea Salt to balance out the sweetness. These chocolates are Dairy Free, Gluten Free and they melt in your mouth.

What do you love most about craft show vending?
After every show I vend at I feel energized, motivated to do more, create more! I love seeing people experience Whimsy Chocolates for the first time. After the first year of doing events, I knew I had to document these hilarious reactions. We did just that! I made a “photo booth” out of PVC pipes and long white drapes, hired PDX Videography and dedicated a portion of our booth to crating a tasting booth for the public. You can view one of the videos we put together on our website. I love meeting the people!
How did you get started in your business?
I was an Orthodontic Assistant for over 12 years. Once I had my daughter I wanted to switch gears and find something that I could grow into a family business. With a 3 month old strapped to me, I got to work!
I had heard over the years that my husband’s Aunt Vicki made delicious chocolates. I asked her if I could be her apprentice. She was more then happy to welcome me into her home in Edmonds, Wa for a 2 day crash course and teach me and my mother in law what she knows. I was hooked!!!
Returning home with the very first chocolates I ever made, a list of equipment that I desperately needed and a perma-grin, I hatched a plan. Valentines was quickly approaching and this was go-time! My husband works for the Fire Department and he was so kind to send out an email to his fellow Fire Fighters. He informed them of my mission to sell enough Valentines Chocolate to buy my first chocolate tempering pot. He stated our box price and let them know how to order. The response was more than encouraging. There were enough orders to not only purchase the tempering pot but to also put towards getting a certified space to work in. The growth was rapid and exciting.
It didn’t take long before Ann, my mother in law, became my partner in crime. She had been right along side me helping with the baby and learning/playing with chocolate. It took a lot of time and effort but we did it. We converted my husbands childhood bedroom into a Certified Chocolate Factory! After a year we out grew the space. We have since expanded our Factory to include the entire down stairs. We have a few employees consisting of fire wives, family and friends. We can’t wait to see where Whimsy Chocolates takes us!
