Who are you and what do you do?
We are a local food truck serving Caribbean fusion sandwiches, specialty sides, and drinks. Menu items include:
Caribbean slaw, Papa Mayo, caramelized onions, tamarind sauce and served on a freshly baked French baguette
The Jerk: Dry rubbed jerk chicken cooked to perfection
The Orient: Slow-cooked pork loin with lemon grass coconut marinated
The Caribbean: Spicy citrus shrimp with a hint of ginger and a kick of garlic
Black Bean Corn Salsa: Whole black beans and sweet corn mixed as a fresh savory medley
Spicy Green Papaya Salad: Shredded green papaya with a zesty spicy tang with a sweet hint of Thai basil
Mango Salsa: Sweet ripe mango with a balance of jalapeno and lime
Pistachio Rice: A nutty savory rice with fresh cilantro and toasted Caribbean spices

What’s the latest thing you’ve been working on?
We are working on some winter specials to our eaters and their stomachs warm!
How did you get started in your business?
My partner and I have always wanted to serve our unique food to the Seattle community. And we thought the food truck industry was a great fit with our personality in the way we wanted to introduce our food to the community!
Are you debuting anything new at the winter show?
Nope we want to feature our staple menu.
Is this a full-time business for you?
For my partner it is a full time business and for me it’s part time.
Where do you see your business in 3 years?
We want to open another additional truck and one brick and mortar restaurant.
Who’s your biggest fan?
Each and everyone one of customers who weather the rainy weather for some delicious Caribbean food.
What’s something you’ve learned through running your business in the past 12 months?
You have to be passionate about what you do or it’s not worth doing.
What’s your favorite item that you sell?
It’s hard to say their like my kids I love every item. But if I had a gun to my head I would have to say our Cuban sandwich, spicy green papaya salad, and lychee lemonade.
What do your customers love most about your products?
Hands down the flavor; every bite brings something surprising.
What’s the best experience you’ve ever had with one of your customers?
My favorite moment is their first bite and when they mmmmm… nothing makes me happier =)
